Healthy Potato Salad


For this tasty, yet fairly healthy potato salad you will need the following ingredients (4 servings):

4 large potatoes, boiled and with skin on.

100 g rocket

2 tomatoes

1 red onion (finely chopped)

Boil the potatoes, and cut them into small cubes. Leave them to chill in refrigerator over night. Chop the onion, and cut the tomatoes into cubes. You may want to cut the rocket as well. Mix the ingredients in one big bowl.


4 tablespoons olive oil

2 tablespoons apple cider vinegar

1 tablespoon balsamic vinegar

1 garlic clove

2 teaspoons of spicy mustard

Mix all the ingredients and add the dressing to the salad, leave in the refrigerator for at least 30 minutes. Serve cold with meat or fish.
